                  WHAT IS NEAPOLITAN PIZZA?

                  (click for menu)

The Real Neapolitan Pizza found at Ugo originated on the streets of Naples, Italy where pizzerias have been making pizza according to its original recipe for centuries. We make our dough using only genuine Caputo '00' flour, and cook it in our 1,000 degree wood burning oven -imported directly from Naples.  We make our own cheese, puree our own tomatoes, and use only authentic ingredients for toppings to result in a delicious pizza. Here at Ugo, we are proud of our Italian heritage, and our authentic Neapolitan Pizza.

                    WHAT IS PASTA FRESCA?

Pasta Fresca means “just made” pasta,
which we do every day here a at Ugo as
they have done in Italy for generations.
Eating hand made fresh egg pasta is one of
                    the most enjoyable and satisfying
experiences of Italian cuisine. You will
experience its lightness, its unique texture,
its smooth entry into the mouth. This
deeply satisfying pairing of pasta and
sauce delivers a richness of taste and
sensation that can only happen when you
make it by hand. Ready to try it?

                          HAVE YOU TRIED UGO PREMIUM
                          HAND MADE GELATO?

                          (click for menu)

Did you know Gelato simply means
                          "frozen" in Italian? This delicious
confection from the 1600’s is not the same
as American ice cream. Ugo authentic
Italian Gelato is made traditionally - with
milk rather than cream, so it is much
lighter, healthier and lower in butterfat
and calories. The milk is heated, then
frozen and churned very slowly. The slow
churning doesn’t absorb as much air as
regular ice cream, and results in Gelato’s
creamy texture and more intense flavor.

                                THE AUTHENTIC ORIGINAL?

We make coffee the way it has been
made since the 1600’s, and unless
you’ve had coffee in Italy or at Ugo,
                                chances are you’ve never experienced
                                real Italian coffee.
We make each coffee by hand using
                                genuine Danesi beans, the real
espresso of Rome. This produces the
rich, delicious “crema” you’ll see atop
                                each Ugo espresso.

and fresh basil was created in
Naples, Italy in 1889. There, a
                                              cook created something special
                                              that evoked the green, white
and red colors of the Italian
flag for the visit of Queen
                                              Margherita of Savoy. The
                                              queen was pleased with his
                                              creation, and the recipe was
                                              named Pizza Margherita in her
                                              honor.

                                              Super-soft Caputo flour is the
choice of pizzaiolo and bakers in
                                              Naples, Italy. It's ground fine
                                              from the finest European winter
wheat for a soft texture and
                                              supple mouthfeel. If you've had
the pleasure of eating pizza in
Naples, this is the flour from
                                              which those crusts are made.

                                              The authentic wood-burning
                                              pizza oven breathes, drawing
cold are in the front and
exhausting hot air out the top -
                                              constantly moving hot, moist
air across the top of your pizza.
The heat stored in the cooking
                                              floor is transferred directly into
the pizza that is set on top of it.
                                              This unique process cooks
pizzas at heats between 800 and
                                              1,200 degrees, in 60 seconds.
                                              makes wood-fired cooking
                                              unlike any other type of
                                              cooking.

Fresh pasta has been made in
                                              households throughout Italy for
                                              generations. Wherever you are
                                              in Italy, being served fresh
homemade pasta is a real treat
and you can be assured that the
pasta was made that day and
will have a taste that will make
                                              you rethink notions of what
                                              good pasta is.

Fresh egg pasta is indeed best
with very little in the way of
sauce. The point is to show off
the pasta, and enhance its flavor
                                              and texture with some fresh
                                              tomato, a light cream, or
perhaps a bit of prosciutto or
                                              freshly snipped Italian herbs
                                              and olive oil.

                                              Anyone who has had the
                                              pleasure of eating handmade
pasta can tell you, the difference
from the packaged stuff is vast.
Fresh Pasta is like placing a silk
                                              scarf across your tongue in
                                              texture, while offering a rich,
                                              flavorful, and savory vessel for
                                              sauces, oils and ingredients to
                                              rest upon.

                                              speed to incorporate more than

                                              process. By contrast, gelato is
                                              made with milk and contains
less than 8 percent milk fat, and
                                              slow churning adds only 25%
                                              air.

                                              Top quality gelato uses only
                                              pure and all natural ingredients,
                                              from the best sources
                                              worldwide. The high butterfat
                                              content found in Americanstyle
                                              ice cream coats the taste
                                              buds. Since gelato uses milk
instead of cream, the taste buds
                                              are allowed to experience the
intense flavor of the all natural,
                                              authentic ingredients.

                                              Prosecco
                                              is the Italian answer to
                                              Champagne. A sparkling
                                              alcoholic drink that is made
                                              from late-ripening white grapes
from the Veneto region, it is
served chilled, and makes a nice
                                              accompaniment to salty
                                              prosciutto, and mixed with
                                              peach puree makes an elegant
                                              cocktail called the Bellini.

Aperol, which got its start in
1919 in Padua, Italy, tastes of
orange rind and spice. It is
                                              slightly bittersweet — with tiny
hints of the 30 different herbs
                                              and spices that it advertises.
                                              The Aperol Spritz combines the
                                              Aperol with sparkling Prosecco,
a splash of soda, and a slice of
                                              orange on the rocks.

                                              Ugo uses only Danesi, the
authentic espresso of Rome, is a
                                              coffee blend composed of
                                              selected Brazilian and African
Arabica as well as the finest
                                              West and East African Robust
                                              beans cultivated at high
                                              altitudes. Danesi delivers an
                                              espresso with strong taste and
                                              an intense body and pleasant
                                              aftertaste, featuring marked
                                              notes of dry fruits.

                                              Crema is the flavorful, aromatic,
                                              reddish-brown froth made when
                                              air bubbles combine with fineground
                                              coffee's soluble oils. The
strong presence of crema in an
                                              espresso shot gives espresso a
                                              fuller flavor, and indicates a
                                              quality, well-ground coffee and
                                              a skilled barista.

                                              Italian coffee culture is an
                                              important part of the daily
Italian ritual. In Italy like at
                                              Ugo, there are four elements
that go into making a perfect
espresso – known as the 4M’s:
                                              1. Micela (coffee bean)
                                              2. Macinature (the grinder)
                                              3. Machina (coffee machine)
                                              4. Mano (“the hand,” or the
                                              touch of the barista)

                                            LA PASSIONE ITALIANA

Daily life in Italy, as in Ugo, is filled with
